Easy Dump and Forget It Slow Cooker Chili

Oooh baby, it's cold outside! 

One of the best winter comfort foods around is a piping hot bowl of yummy chili. And this recipe that I'm about to share with you is my go-to for weeknight chili. It's fast, and can be in the slow-cooker, simmering in all its glory, in about 15 mins flat. It also requires minimal ingredients, which is another plus. 

But the flavor is amazing and it's just so easy! 

What I like to do is brown the meat before I go to work in the morning and then pour everything in the slow cooker and have it cook during the day. Then, when I get home, I have delicious chili waiting for me! And since this recipe only takes 15 mins to prep and clean up after, throwing it in before work usually isn't problem (Trust me, it's WORTH forgoing your extra "snooze" on the alarm). 

I like to eat this chili plain, but you'll see in this picture, it's served over rice (which is what Matt likes). We also enjoy throwing oyster crackers, cheese and sour cream on top! Yum!

Without further ado, here's the recipe!

Easy Dump and Forget it Slow Cooker Chili:

I love a good, hearty chili which is exactly what this recipe produces. The best thing about it is that it’s also super easy to make. Just dump all the ingredients into a crockpot, give it a stir, set it and forget it!

Prep Time: 15 mins


  • 1/2 of a large yellow onion or one small yellow onion, diced

  • 1 lb ground beef

  • 1 (14.5 oz) can diced tomatoes

  • 1 (14.5 oz) can tomato sauce

  • 1 (15 oz) can dark red kidney beans

  • 2 cups water

  • 2 tsp oregano

  • 2 tsp cumin

  • 1 tsp chili powder (optional: add more to taste)

  • 1 tsp garlic powder

  • 1 tsp salt

For Thickening:

  • 1 tbsp cornstarch (optional)


Brown the beef, drain grease and add to crockpot. Dump in the rest of the ingredients except the cornstarch and stir. Cook on high for 4 hours or low, 8 hours. 

Optional: During the last half hour of cooking, in a small dish dissolve cornstarch in 4 tbsp of water. Dump into crockpot and stir. Allow to continue cooking for half hour. (Sometimes I do this, sometimes I don't. It's good either way!)
